It’s-a Pizza Time!


FINALLY my craving for pizza has been satisfied! Thanks to a hungry girl recipe (modified slightly due to lack of pita bread) I was able to make a homemade pizza that was deeeelicious, crispy, and healthy all in one. The sauce is from Hungry Girl, I swear I could almost drink it. lol. So yes, today you get another recipe from me! =)

BBQ Chicken Pizza

For the Sauce:

1/2 cup of canned tomato sauce

4 tbsp. of ketchup

4 tsp. brown sugar (you may be able to sub this for your own personal sweetener, I just use what she suggests which is the brown sugar)

4 tsp. apple cider vinegar

1 tsp. garlic powder

For the Rest of the Pizza:

3 sticks of Light String Cheese (I use the Frigo Light, they are only 60 calories each)

1 whole wheat pizza crust

1 chicken breast, chopped into small, bite-size pieces

1/4 to 1/2 cup red onion (you can use more or less according to your preference

freshly chopped cilantro


Preheat oven to 450 degrees. Spray a baking sheet with non-stick cooking spray and place your pizza crust in the center. In a small bowl, combine all the ingredients for the BBQ sauce, spread about half the mixture onto the pizza crust leaving about a half inch around the edge and set aside the rest.

In a food processor/chopper break apart the string cheese and then process until it is finely grated. You can also chop these by hand on your cutting board if you so desire. Then spread the cheese mixture onto the pizza crust.

Take your chicken breast and cut into bite-size pieces. Mix the chicken with the remaining BBQ sauce and then spread that mixture over the cheese. Sprinkle your red onion onto the pizza.

Bake in your oven for about 10-15 minutes, or until chicken is cooked through and crust crispy enough for your liking.

Sprinkle on your freshly chopped cilantro, let stand for about 4 minutes, slice into 8 pieces and enjoy!

My modified version of this recipe has about 108 calories per slice, so you can really dig in and enjoy your pizza without all the extra calories!
